Instructions

  1. Sauté the Vegetables
    • Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Sauté for 5-7 minutes, or until softened.
    • Stir in garlic, thyme, and smoked paprika (if using), and cook for an additional 1 minute.
  2. Add the Split Peas and Broth
    • Add the split peas, vegetable broth, and bay leaf to the pot. Stir well.
