Ingredients
- 1 block (14 oz) Firm or Extra-Firm Tofu, pressed and cubed
- 2 tbsp Soy Sauce (plus more to taste)
- 1-inch piece Ginger, minced
- 2 cloves Garlic, minced
- 3 cups Mixed Veggies (e.g., broccoli florets, sliced carrots, and bell peppers)
- 2 tbsp Sesame Oil (or other cooking oil)
- Cooked Rice (for serving)
Instructions
- Prepare the tofu: Press the tofu to remove excess water, then cut it into cubes.
- Cook the tofu: Heat 1 tbsp of sesame oil in a large skillet or wok over medium-high heat. Add the tofu cubes and sauté until crispy and golden on all sides, about 8-10 minutes. Remove and set aside.
- Cook the veggies: In the same pan, add another tbsp of sesame oil. Add the minced garlic and ginger, stirring for 30 seconds until fragrant. Add the mixed veggies and stir-fry until tender but still crisp (about 5-7 minutes).
- Combine: Return the tofu to the pan. Pour in the soy sauce and stir to coat everything evenly. Cook for another 1-2 minutes to heat through.
- Serve: Serve the stir-fry over a bed of warm rice, garnished with sesame seeds or sliced green onions if desired.
