Vegan Sweet Potato and Black Bean Enchiladas

Ingredients:

  • 1 large sweet potato, diced
  • 1 can black beans, drained
  • 1 cup salsa
  • 6 whole-grain tortillas
  • 1 cup enchilada sauce
  • 1/2 cup vegan cheese
  • 1 tsp cumin

Instructions:

  1. Boil sweet potato cubes until tender. Mash with black beans, salsa, cumin, salt, and pepper.
  2. Fill tortillas with the mixture, roll, and place seam-side down in a baking dish.
  3. Top with enchilada sauce and vegan cheese. Bake at 375°F for 20 minutes or until bubbly.
