Vegan Lentil Curry Recipe

Ingredients:

  • 1 cup lentils (red or green, rinsed and drained)
  • 1 can coconut milk (400 ml)
  • 2 tbsp curry powder
  • 3 garlic cloves, minced
  • 1 medium onion, diced
  • 2 medium tomatoes, diced (or 1 can diced tomatoes)
  • 2 cups vegetable broth
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Optional: Rice or naan for serving

Instructions:

  1. Prepare the Aromatics
    • Heat a large pot or skillet over medium heat. Add a splash of oil (or water for oil-free cooking).
    • Sauté the minced garlic and diced onion until fragrant and translucent (about 3-5 minutes).
  2. Toast the Spices
    • Add the curry powder to the pot. Stir constantly for 1 minute to release the spices’ flavors.
  3. Cook the Lentils
    • Stir in the lentils, coconut milk, diced tomatoes, and vegetable broth. Mix well to combine.
    • Bring the mixture to a boil, then reduce the heat to a simmer.
    • Cover and cook for 20-25 minutes, stirring occasionally, until the lentils are tender. Add more broth or water if needed.
  4. Add the Spinach
    • Stir in the fresh spinach and cook for an additional 2-3 minutes until wilted.
    • Season with salt and pepper to taste.
  5. Serve
    • Serve the curry warm over steamed rice or alongside naan.
