Vegan Lentil Curry Recipe
Ingredients:
- 1 cup lentils (red or green, rinsed and drained)
- 1 can coconut milk (400 ml)
- 2 tbsp curry powder
- 3 garlic cloves, minced
- 1 medium onion, diced
- 2 medium tomatoes, diced (or 1 can diced tomatoes)
- 2 cups vegetable broth
- 2 cups fresh spinach
- Salt and pepper to taste
- Optional: Rice or naan for serving
Instructions:
- Prepare the Aromatics
- Heat a large pot or skillet over medium heat. Add a splash of oil (or water for oil-free cooking).
- Sauté the minced garlic and diced onion until fragrant and translucent (about 3-5 minutes).
- Toast the Spices
- Add the curry powder to the pot. Stir constantly for 1 minute to release the spices’ flavors.
- Cook the Lentils
- Stir in the lentils, coconut milk, diced tomatoes, and vegetable broth. Mix well to combine.
- Bring the mixture to a boil, then reduce the heat to a simmer.
- Cover and cook for 20-25 minutes, stirring occasionally, until the lentils are tender. Add more broth or water if needed.
- Add the Spinach
- Stir in the fresh spinach and cook for an additional 2-3 minutes until wilted.
- Season with salt and pepper to taste.
- Serve
- Serve the curry warm over steamed rice or alongside naan.
