Ingredients:
- 1 can chickpeas, drained and mashed
- 2 tbsp vegan mayo
- 1 tsp Dijon mustard
- 1 tbsp lemon juice
- 1 celery stalk, chopped
- Whole grain bread (or gluten-free option)

Instructions:
- In a bowl, mix mashed chickpeas, vegan mayo, Dijon mustard, lemon juice, and chopped celery.
- Spread on whole grain bread and add lettuce and tomato slices.
- Serve as a sandwich or open-faced toast.
“Chickpeas are also an excellent source of non-animal protein,” Lane adds. “They’re great for vegetarians and vegans.” In addition, chickpeas are also brimming with vitamins and minerals. These include choline, which helps your brain and nervous system run smoothly, as well as folate, magnesium, potassium and iron.
You can eat at least one serving (28 grams) of chickpeas per day. However, don’t eat more than 70 grams a day since that can cause adverse side effects. If you consume too many chickpeas, some side effects you may get include bloating, nausea, and gas.
