Ingredients

Base:

  • 1 tbsp olive oil (or water for oil-free)
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 carrot, finely chopped
  • 1 celery stalk, finely chopped

Protein:

  • 1 cup lentils (cooked green or brown lentils, or one 15 oz can, rinsed and drained)
  • 1 cup mushrooms, finely chopped (or crumbled tofu/tempeh)

Sauce:

  • 1 can (15 oz) crushed tomatoes or tomato purée
  • 1/4 cup tomato paste
  • 1/2 cup vegetable broth or red wine (for depth)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp smoked paprika (optional)
  • Salt and black pepper to taste

Optional Add-Ins:

  • 1 tbsp soy sauce or tamari (for umami)
  • 1/2 tsp chili flakes (for a spicy kick)
  • Fresh parsley or basil for garnish

Instructions

  1. Sauté the Veggies
    • Heat olive oil in a large skillet or saucepan over medium heat.
    • Add onion, garlic, carrot, and celery. Sauté for 5-7 minutes until softened.
  2. Cook the Protein
    • Add the chopped mushrooms (or tofu/tempeh) to the skillet. Sauté for 5-6 minutes until browned and most moisture has evaporated.
    • Stir in the lentils and cook for 1-2 minutes.
  3. Build the Sauce
    • Add the crushed tomatoes, tomato paste, vegetable broth (or wine), oregano, basil, smoked paprika, and soy sauce (if using).
    • Stir well and bring to a simmer.
  4. Simmer
    • Reduce the heat to low, cover, and let the sauce simmer for 15-20 minutes, stirring occasionally.
    • Adjust seasoning with salt, pepper, and chili flakes if desired.
  5. Serve
    • Toss with your favorite cooked pasta (spaghetti, fettuccine, or penne) or serve over zucchini noodles for a low-carb option.
    • Garnish with fresh herbs and a sprinkle of nutritional yeast or vegan Parmesan.
