Instructions
- Preheat oven: Set your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- Mash the bananas: In a large mixing bowl, mash the bananas with a fork until smooth.
- Add wet ingredients: Stir in the sugar, melted coconut oil, almond milk, and vanilla extract until well combined.
- Combine dry ingredients: In a separate bowl, whisk together the flour and baking soda. Gradually fold the dry ingredients into the wet mixture until just combined (do not overmix).
- Bake: Pour the batter into the prepared loaf pan. Smooth the top with a spatula and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
