For the Meatballs:

  • 1 lb lean ground turkey
  • 1/4 cup breadcrumbs (or almond flour for low-carb)
  • 1 large egg, beaten
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped (or 1 tsp dried)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Zoodles:

  • 4 medium zucchinis, spiralized
  • 1 cup marinara sauce (low-sugar, store-bought or homemade)
  • 1 tablespoon olive oil

Instructions:

  1. Prepare the Meatballs:
    • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
    • In a mixing bowl, combine ground turkey, breadcrumbs, egg, garlic, parsley, onion powder, salt, and pepper. Mix until just combined.
    • Roll the mixture into small balls (about 1.5 inches in diameter) and place them on the baking sheet.
    • Bake for 18–20 minutes or until fully cooked and lightly browned.
  2. Cook the Zucchini Noodles:
    • Heat olive oil in a large skillet over medium heat.
    • Add the zucchini noodles and sauté for 2–3 minutes, tossing gently until just tender. Be careful not to overcook to prevent sogginess.
  3. Heat the Marinara Sauce:
    • In a small saucepan, heat the marinara sauce over low-medium heat until warmed through.
  4. Assemble the Dish:
    • Plate the zucchini noodles and top with turkey meatballs.
    • Spoon marinara sauce over the meatballs and noodles.
  5. Optional Garnishes:
    • Sprinkle with grated Parmesan or fresh basil for extra flavor.
