Sweet Potato & Black Bean Breakfast Hash

Ingredients:

  • 1 medium sweet potato, diced
  • 1 cup black beans, drained and rinsed
  • ½ red bell pepper, diced
  • 1 small onion, chopped
  • 1 tsp olive oil
  • 1 tsp cumin
  • ½ tsp paprika
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a pan and sauté onion, sweet potato, and red bell pepper for 5-7 minutes until tender.
  2. Add black beans, cumin, paprika, salt, and pepper. Cook for an additional 5 minutes.
  3. Serve warm with a side of salsa or avocado.
