Stuffed Bell Peppers with Quinoa and Black Beans

Ingredients:

  • 4 bell peppers, halved and seeded
  • 1 cup cooked quinoa
  • 1 cup black beans, drained and rinsed
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tbsp olive oil
  • ¼ cup salsa
  • Fresh cilantro for garnish

Instructions:

  1. Preheat oven to 375°F. In a bowl, mix quinoa, black beans, cumin, paprika, and salsa.
  2. Stuff the bell pepper halves with the mixture and place on a baking sheet.
  3. Bake for 25-30 minutes. Garnish with fresh cilantro before serving.
