Spaghetti Squash with Tomato Basil Sauce

Ingredients:

  • 1 large spaghetti squash
  • 2 tbsp olive oil
  • 3 cups cherry tomatoes, halved
  • 2 garlic cloves, minced
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste
  • Parmesan cheese for garnish

Instructions:

  1. Halve and seed spaghetti squash. Drizzle with olive oil and roast at 400°F for 40 minutes.
  2. In a pan, heat remaining oil and add garlic and cherry tomatoes. Cook until tomatoes are soft, then mix in basil.
  3. Shred squash with a fork and top with the tomato sauce and Parmesan.

Spaghetti squash is high in fiber as well as potassium and folic acid. Antioxidants vitamin C and beta carotene are important for immune function and disease prevention.
