  • 1.5 lbs (700g) baby or new potatoes (or any small waxy potatoes)
  • 2 tbsp olive oil (or vegan butter for a richer flavor)
  • 1 tsp sea salt (adjust to taste)
  • Freshly cracked black pepper (to taste)
  • 1 tsp garlic powder (optional)
  • 2-3 tbsp fresh herbs, finely chopped (such as parsley, rosemary, thyme, or chives)

Instructions:

  1. Prepare the Potatoes:
    • Wash and scrub the potatoes. If they’re larger, cut them in halves or quarters for even cooking.
  2. Cook the Potatoes:
    • Boil the potatoes in a large pot of salted water for about 10-15 minutes, or until they’re fork-tender. Drain and let them sit for a minute to dry out.
  3. Crisp the Potatoes:
    • Heat the olive oil (or vegan butter) in a large skillet over medium heat.
    • Add the potatoes, and gently press them down with a fork or potato masher to flatten slightly. This helps them get crispy edges.
