Mediterranean Quinoa Stuffed Peppers

Ingredients:

  • 4 bell peppers, halved and seeds removed
  • 1 cup cooked quinoa
  • ½ cup cherry tomatoes, halved
  • ¼ cup Kalamata olives, chopped
  • 1 tbsp olive oil
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F. Place bell pepper halves on a baking sheet.
  2. In a bowl, mix quinoa, tomatoes, olives, olive oil, parsley, salt, and pepper.
  3. Stuff peppers with quinoa mixture and bake for 25-30 minutes.
