Keto Cauliflower Mac and Cheese

Ingredients:

  • 1 head cauliflower, chopped into florets
  • 1 cup cheddar cheese, shredded
  • ¼ cup heavy cream
  • 2 tbsp cream cheese
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions:

  1. Steam cauliflower florets until tender, then drain.
  2. In a pot, heat cream, cream cheese, and mustard until smooth. Stir in cheddar cheese.
  3. Mix the cauliflower with the cheese sauce, then season with salt and pepper. Serve hot.

It utilizes cauliflower as a low carb alternative to traditional macaroni, providing ample fiber, vitamins, and minerals while keeping the carb count in check.
