Keto Cauliflower Fried Rice

Ingredients:

  • 1 head cauliflower, riced
  • 1 egg
  • 1 cup mixed vegetables (zucchini, bell pepper, and broccoli)
  • 1 garlic clove, minced
  • 1 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp sesame oil

Instructions:

  1. Heat sesame oil in a pan and sauté garlic and vegetables for 5 minutes.
  2. Add cauliflower rice and cook for 5-7 minutes.
  3. Push rice to one side, scramble the egg, then mix everything together.
  4. Stir in soy sauce and serve hot.
