Grilled Portobello Mushrooms with Pesto

Ingredients:

  • 4 large portobello mushrooms
  • 2 tbsp olive oil
  • 1 tsp balsamic vinegar
  • ½ cup fresh basil
  • ¼ cup pine nuts
  • 1 clove garlic
  • 2 tbsp olive oil (for pesto)
  • Salt and pepper to taste

Instructions:

  1. Brush mushrooms with olive oil, balsamic vinegar, salt, and pepper. Grill for 5-7 minutes per side.
  2. In a blender, blend basil, pine nuts, garlic, and olive oil until smooth. Serve pesto over grilled mushrooms.
