Grilled Eggplant with Tahini Sauce

Ingredients:

  • 1 large eggplant, sliced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • ¼ cup tahini
  • 2 tbsp lemon juice
  • 1 garlic clove, minced
  • 1 tbsp water
  • Fresh parsley for garnish

Instructions:

  1. Brush eggplant slices with olive oil, paprika, salt, and pepper. Grill for 3-5 minutes per side.
  2. Mix tahini, lemon juice, garlic, and water to make the sauce.
  3. Drizzle tahini sauce over grilled eggplant and garnish with parsley.
