Greek Salad with Tofu Feta

  • 1 block firm tofu, cubed
  • 1 tbsp olive oil
  • 1 tsp oregano
  • 1 cucumber, chopped
  • 2 tomatoes, chopped
  • ½ red onion, sliced
  • ¼ cup Kalamata olives
  • 2 tbsp lemon juice
  • 1 tbsp red wine vinegar
  • Salt and pepper to taste

Instructions:

  1. Toss tofu cubes with olive oil, oregano, and a pinch of salt, then bake at 375°F for 20 minutes.
  2. Combine cucumber, tomatoes, onion, and olives in a bowl. Add baked tofu.
  3. Drizzle with lemon juice, red wine vinegar, salt, and pepper. Toss and serve chilled.
