Ingredients:
- 1 can chickpeas, drained and rinsed
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 tbsp parsley, chopped
- 2 tbsp tahini
- 1 tbsp lemon juice
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions:
- In a bowl, mix chickpeas, cucumber, bell pepper, and parsley.
- For the dressing, whisk tahini, lemon juice, garlic, salt, and pepper. Add water to thin if needed.
- Drizzle dressing over the salad and toss to combine.
