Creamy Garlic Spinach Chicken

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 3 tablespoons olive oil
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • ½ cup grated Parmesan cheese
  • Fresh parsley for garnish

Steps

  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  2. Season the chicken breasts with salt, pepper, paprika, and onion powder.
  3. Place the chicken in the skillet and sear for about 6-7 minutes on each side or until golden brown and cooked through. Remove and cover to keep warm.
  4. In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for 1-2 minutes until fragrant.
  5. Pour in the heavy cream and simmer for 3-4 minutes, allowing it to thicken slightly.
  6. Stir in the grated Parmesan and spinach, cooking until the spinach wilts and the sauce becomes creamy.
  7. Return the chicken to the skillet, coating it in the sauce for a minute to heat through.
  8. Serve hot, garnished with fresh parsley.
