  • 1 tsp dried thyme (or 1 tbsp fresh thyme)
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Prepare the Marinade
    • In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, soy sauce, thyme, smoked paprika, salt, and pepper.
  2. Marinate the Mushrooms
    • Place the mushrooms in a large bowl or a resealable plastic bag. Pour the marinade over them and toss to coat evenly.
    • Cover and let them marinate for at least 30 minutes (or up to 2 hours) in the refrigerator, stirring occasionally to ensure even coverage.
  3. Preheat the Grill
    • Heat your grill to medium-high. Lightly oil the grates to prevent sticking.
  4. Grill the Mushrooms
    • Remove the mushrooms from the marinade, allowing excess liquid to drip off. Reserve the marinade for basting.
    • Place the mushrooms on the grill, gill-side down. Grill for 3-4 minutes, then flip and brush with the reserved marinade.
    • Grill for another 3-4 minutes or until tender and slightly charred.
  5. Serve
    • Transfer the mushrooms to a serving platter. Garnish with fresh parsley if desired and serve immediately.
