Ingredients:
- 1 can chickpeas (15 oz), drained and rinsed
 - 3 tbsp vegan mayonnaise
 - 1 tsp Dijon mustard
 - 2 celery stalks, diced
 - 1/4 red onion, finely diced
 - 4 large lettuce leaves
 - 4 large tortillas (whole wheat or your preferred type)
 - Salt and pepper to taste
 
Instructions:
- Prepare the Chickpea Salad
- Place the chickpeas in a large bowl. Use a fork or potato masher to mash them, leaving some chunks for texture.
 - Add the vegan mayonnaise, Dijon mustard, diced celery, and red onion.
 - Mix everything together until well combined.
 - Season with salt and pepper to taste.
 
 - Assemble the Wraps
- Lay a tortilla flat and place a lettuce leaf in the center.
 - Spoon a generous amount of the chickpea salad onto the lettuce.
 - Fold the sides of the tortilla inward, then roll it up tightly to form a wrap.
 
 - Serve
- Slice the wraps in half if desired and serve immediately.
