Chickpea Salad Wraps Recipe

  • 1 can chickpeas (15 oz), drained and rinsed
  • 3 tbsp vegan mayonnaise
  • 1 tsp Dijon mustard
  • 2 celery stalks, diced
  • 1/4 red onion, finely diced
  • 4 large lettuce leaves
  • 4 large tortillas (whole wheat or your preferred type)
  • Salt and pepper to taste

Instructions:

  1. Prepare the Chickpea Salad
    • Place the chickpeas in a large bowl. Use a fork or potato masher to mash them, leaving some chunks for texture.
    • Add the vegan mayonnaise, Dijon mustard, diced celery, and red onion.
    • Mix everything together until well combined.
    • Season with salt and pepper to taste.
  2. Assemble the Wraps
    • Lay a tortilla flat and place a lettuce leaf in the center.
    • Spoon a generous amount of the chickpea salad onto the lettuce.
    • Fold the sides of the tortilla inward, then roll it up tightly to form a wrap.
  3. Serve
    • Slice the wraps in half if desired and serve immediately.
