Cauliflower Breakfast Hash

Ingredients: 1/2 cup riced cauliflower, 1/4 cup diced mushrooms, 1/4 cup bell peppers, 1 tbsp olive oil, salt and pepper to taste.

Instructions:

  1. Heat olive oil in a pan and add cauliflower, mushrooms, and bell peppers.
  2. Cook for about 5-7 minutes until the cauliflower is tender, seasoning with salt and pepper.

Cauliflower has a group of substances known as glucosinolates. As you chew and digest it, these substances are broken down into compounds that may help prevent cancer. They help protect cells from damage and have anti-inflammatory, antiviral, and antibacterial effects.

Hash is most well known in its corned beef iteration, complete with a couple of fried eggs on top. But hash can be any collision of skillet-fried potatoes and meat. It doesn’t have to involve corned beef. And honestly, the eggs are optional, too.
