Blistered Padron Peppers

  • 1/2 lb (200g) Padron peppers
  • 1-2 tbsp olive oil

Instructions

  1. Prepare the peppers:
    • Wash the Padron peppers and pat them dry thoroughly. This helps them blister better in the pan.
  2. Heat the oil:
    • Heat a large skillet or cast-iron pan over medium-high heat. Add the olive oil and let it get hot, but not smoking.
  3. Blister the peppers:
    • Add the Padron peppers to the pan in a single layer.
    • Cook for 2-3 minutes on each side, turning occasionally, until the skin is blistered and slightly charred in spots.
  4. Season and serve:
    • Remove the peppers from the pan and transfer them to a serving plate.
    • Sprinkle generously with flaky sea salt and serve immediately.
