Creamy Garlic Spinach Chicken
Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach
- 3 tablespoons olive oil
- 1 cup heavy cream
- 4 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- ½ cup grated Parmesan cheese
- Fresh parsley for garnish
Steps
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Season the chicken breasts with salt, pepper, paprika, and onion powder.
- Place the chicken in the skillet and sear for about 6-7 minutes on each side or until golden brown and cooked through. Remove and cover to keep warm.
- In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for 1-2 minutes until fragrant.
- Pour in the heavy cream and simmer for 3-4 minutes, allowing it to thicken slightly.
- Stir in the grated Parmesan and spinach, cooking until the spinach wilts and the sauce becomes creamy.
- Return the chicken to the skillet, coating it in the sauce for a minute to heat through.
- Serve hot, garnished with fresh parsley.
