Baked Zucchini Fries

Ingredients:

  • 2 zucchinis, cut into strips
  • 1 cup almond flour
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 flax egg (1 tbsp flaxseed meal + 3 tbsp water)
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 400°F. Mix almond flour, garlic powder, paprika, salt, and pepper in a bowl.
  2. Dip zucchini strips into the flax egg, then coat in the almond flour mixture.
  3. Bake on a lined sheet for 20-25 minutes until crispy.
