Gluten-Free Butternut Squash Soup

Ingredients:

  • 1 butternut squash, peeled and diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 tsp turmeric
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a pot and sauté onion and garlic until soft.
  2. Add butternut squash, turmeric, and vegetable broth. Simmer for 20-25 minutes until squash is tender.
  3. Blend the soup until smooth and season with salt and pepper.
