Gluten-Free Chickpea Salad with Tahini Dressing

Ingredients:

  • 1 can chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 tbsp parsley, chopped
  • 2 tbsp tahini
  • 1 tbsp lemon juice
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions:

  1. In a bowl, mix chickpeas, cucumber, bell pepper, and parsley.
  2. For the dressing, whisk tahini, lemon juice, garlic, salt, and pepper. Add water to thin if needed.
  3. Drizzle dressing over the salad and toss to combine.
