Coconut Chia Seed Pudding

Ingredients:

  • ¼ cup chia seeds
  • 1 cup coconut milk
  • 1 tbsp maple syrup (optional)
  • ½ tsp vanilla extract
  • 1 tbsp shredded coconut
  • Fresh fruit for topping

Instructions:

  1. Mix chia seeds, coconut milk, maple syrup, and vanilla in a jar.
  2. Refrigerate for at least 4 hours or overnight.
  3. Serve topped with shredded coconut and fresh fruit.
