Cauliflower Steaks with Chimichurri

Ingredients:

  • 1 head of cauliflower, cut into steaks
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper to taste
  • ½ cup fresh parsley
  • 2 tbsp red wine vinegar
  • 1 garlic clove, minced
  • ¼ cup olive oil (for chimichurri)

Instructions:

  1. Preheat oven to 400°F. Brush cauliflower steaks with olive oil, paprika, salt, and pepper.
  2. Roast for 25-30 minutes until golden brown.
  3. For chimichurri, mix parsley, red wine vinegar, garlic, and olive oil in a bowl. Serve over roasted cauliflower.
