- ¼ cup olive oil (for chimichurri)
Instructions:
- Preheat oven to 400°F. Brush cauliflower steaks with olive oil, paprika, salt, and pepper.
- Roast for 25-30 minutes until golden brown.
- For chimichurri, mix parsley, red wine vinegar, garlic, and olive oil in a bowl. Serve over roasted cauliflower.
