Ingredients:
- 4 bell peppers, halved and seeded
- 1 cup cooked quinoa
- 1 cup black beans, drained and rinsed
- 1 tsp cumin
- 1 tsp paprika
- 1 tbsp olive oil
- ¼ cup salsa
- Fresh cilantro for garnish
Instructions:
- Preheat oven to 375°F. In a bowl, mix quinoa, black beans, cumin, paprika, and salsa.
- Stuff the bell pepper halves with the mixture and place on a baking sheet.
- Bake for 25-30 minutes. Garnish with fresh cilantro before serving.
