Baked Falafel with Tzatziki

Ingredients:

  • 1 can chickpeas, drained
  • 1 garlic clove
  • 1 small onion, chopped
  • 2 tbsp fresh parsley
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tbsp olive oil
  • 1 cucumber, grated
  • 1 cup plain yogurt (for tzatziki)
  • 1 tbsp lemon juice

Instructions:

  1. Preheat oven to 375°F. Blend chickpeas, garlic, onion, parsley, cumin, coriander, and olive oil in a food processor until smooth.
  2. Form into small patties and bake for 20-25 minutes.
  3. For tzatziki, mix grated cucumber, yogurt, and lemon juice. Serve with baked falafel.
