Ingredients:
- 1 large eggplant, sliced
- 2 tbsp olive oil
- 1 tsp smoked paprika
- ¼ cup tahini
- 2 tbsp lemon juice
- 1 garlic clove, minced

- Fresh parsley for garnish
Instructions:
- Brush eggplant slices with olive oil, paprika, salt, and pepper. Grill for 3-5 minutes per side.
- Mix tahini, lemon juice, garlic, and water to make the sauce.
- Drizzle tahini sauce over grilled eggplant and garnish with parsley.
