Ingredients:
- 4 bell peppers, halved and seeds removed
- 1 cup cooked quinoa
- ½ cup cherry tomatoes, halved
- ¼ cup Kalamata olives, chopped
- 1 tbsp olive oil
- 2 tbsp fresh parsley, chopped
- Salt and pepper to taste
Instructions:
- Preheat oven to 375°F. Place bell pepper halves on a baking sheet.
- In a bowl, mix quinoa, tomatoes, olives, olive oil, parsley, salt, and pepper.
- Stuff peppers with quinoa mixture and bake for 25-30 minutes.
